How we prepare Deshi Ghee?

We can make ghee mainly with 2 methods: using Malai & using Bilona method. In both ways we get pure ghee but purest and best ghee with rich in nutrition is Bilona(बिलोना) method ghee. We follow below steps to get Traditional Deshi Ghee using Bilona method:

  • In this method first we boil milk for 3 or 4 hours on low heat till milk’s colour converts to light brownish and thick malai comes on top of the milk.
  • Then in evening we put Jaaman (जामण – a spoonful curd or butter milk) in the above prepared milk when it comes in room temperature. We cover it with some cloth and put in room temperature to give it a little warmth so that it converts into curd properly.
  • Then the curd is churned/shaked with hand or machine to extract butter. This butter is also called ‘Nooni’(नूणि, मक्खन) ghee in some places of India. This is the ghee Kanhiya(God Krishna) enjoyed a lot in his childhood with his friends. Krishna mischievously stole butter from the homes of Gopis but was never to be caught and due to this with love Gopis and their villagers called Krishna ‘Maakhan Chor – माखन चोर’. However, the incident of stealing butter carried a deep spiritual symbolism.
  • Then we boil it on low flame till water is evaporated leaving pure ghee behind.
  • Last thing is to remove butter milk particles if any remains, now it’s purest of pure ghee.

So, this process is slow and traditional in nature, which we are following from ancient times. Earlier our women used to churn the curd with their hands using wooden churning stick also called झेरणी in Haryana.

These days’ lot of electric machines available to churn curd, life is more easy than earlier.

Ghee can be of Cow or buffalo. Cow ghee is more nutritious, healthy and costly as well.

What is A2 Ghee:

this is trending keyword in internet world for Ghee, hold on it’s the newly scientific fashioned name but no new product invented but the same pure Deshi cow Ghee which we consume from generations.

So, we get A2 Ghee from Indian breed of cows – A2 Ghee is extracted from A2 Milk. Note that, A2 Milk only has ‘A2 Beta casein’ (a type of protein).

This type of protein is found in the milk of only some native Indian breed of cow’s like Sindhi, Tharparkar, Gir and Sahiwal. They produce milk high in A2 Beta casein, though some other animals also having A2 Beta Casein in their milk but in less amount.
